Moctezuma's revenge is currently a popular expression in Mexico, which refers to the gastrointestinal problems that foreigners may suffer when eating Mexican food since they are not used to eating this type of cuisine prepared mainly in most cases with chile, different condiments, and oils used (especially in street food).


Origin.

It all began with the arrival of the Spaniards to Aztec lands and an accident with the arrival of corn in Spain when they tried to process it following the same process as with wheat, leaving aside the nixtamalization (this helps to release niacin) that they made the ancient natives of Mexico to corn.
